chard and sausage frittata

this was one of those ‘quick, clean out the fridge’ kind of recipes. it ended up being super tasty, so i thought i would share.

chard and sausage frittata


1/2 pound breakfast sausage

1 bunch of swiss chard

6 eggs

3/4-1 cup shredded fontina cheese

1/2 cup panko bread crumbs


in a 10-inch pan, i cooked up about 1/2 pound breakfast sausage and a bunch of swiss chard. i whisked about 6 eggs with 1/4 cup shredded fontina cheese. once the sausage was cooked and the chard wilted, i added the eggs to the pan. i kind of mixed it around for an even dispersing of ingredients. then i removed the pan from heat, momentarily. i shredded more fontina, about 1/2 cup, and combined it with 1/2 cup panko and sprinkled this combination over top. then i popped the whole pan into the oven at 350 for about 15 minutes. (p.s. my pan is safe up to 400 degrees, confirm yours is before you put it in the oven)

this was a great dinner for my husband and i, with leftovers for both of us.
